Tomorrow morning we are running away to the beach. I have no idea what the NJ shore is even going to look like when we get down there but we going. Today we got some very sad news about a very close friend of the family. We are pretty heartbroken between the aftermath of the hurricane and now this. We need to escape even just for the day. Here is an outfit I put together and laid out for the morning.

Oh How Pinteresting
During the storm this weekend (when we still had power) I was a bit obsessed with pinning. Since the fall season is quickly upon us I've been all about fashion and changing up my closet. Ever notice how interest makes you want to go out and buy tons of clothes? Happens to me all the time!

Abelskivers For Desert
When the 4 walls start caving in what do you do EAT! (I'm gonna get so fat this week. Our gym has also lost power and may not be opened for days.) Last night we tried Ebelskivers! Ebelskiver is a Dutch desert and its incredible! My friend got the pan and the cookbook for her bridal shower. This exciting little desert was AWESOME! We made a simple recipe and filled them with lovely goodies like homemade raspberry jam, Nutella and peanut butter.

Here is the recipe:
- 2 egg whites
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon white sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 egg yolks
- 4 tablespoons butter, melted
- 2 cups buttermilk
- 1 cup vegetable oil for frying
- In a bowl, beat the egg whites with an electric mixer until they can hold a stiff peak. Set aside.
- Mix together the flour, baking powder, salt, baking soda, sugar, egg yolks, melted butter and buttermilk at one time and beat until smooth. Gently fold in the egg whites last.
- Put about 1tablespoon of vegetable oil in the bottom of each pan cup and heat until hot. Pour in about 2 tablespoons of the batter into each cup. We filled ours with goodies. As soon as they get bubbly around the edge and then turn them. We didn't have the flipper so we used chop sticks. Continue cooking,turning the ball to keep it from burning.

Staying Positive
Woo weekend. I'm sure all of my east coast friends are feeling the pain that Irene has brought over the weekend. I keep looking at these pictures posted by others and my heart is breaking. Locally, we have had many roads washed away. Several local dams have broken and my county is considered a Disaster Area. Brian and I have been evacuated. Thankfully my best friend lives 8 minutes away in highlands and continues to have power. We packed the contents of our freezer and drove over yesterday afternoon. Currently there is no way out of our county. Although it is an inconvenience we are so lucky that none of our friends or loved ones have major damage.
We took these pictures before several dams broke in town yesterday.
