Rainbow Cookies

My most favorite thing to do during the holidays is bake rainbow cookies. They are a hit with everyone. I still say I won Brian's family over with these cookies a few years ago!




  • 8 ounces almond paste
  • 1 cup butter, soft
  • 1 cup sugar
  • 4 eggs, separated
  • 2 cups all-purpose flour
  • Red food coloring
  • Green food coloring
  • Red raspberry jam
  • Apricot jam
  • 1 cup semisweet chocolate chips, melted


  1. Preheat oven to 350 degrees F Line three 9x13 inch baking pans with wax paper. Its easier if you have 3 of the same pans. It takes less time. 
  2. In a large bowl, break apart almond paste with a fork, mix together with butter, sugar, and egg yolks. When mixture is smooth, mix in and it will form a dough. In a small bowl, beat egg whites until soft peaks form. Mix egg whites into the dough. Split dough into 3 equal portions. Usually I get a little more then one cup in each. Add red food coloring to one, and one with green food coloring, leaving the last without any color. Spread each portion into one of the prepared baking pans.
  3. Bake 10 to 12 minutes in the preheated oven, until lightly browned. Remove wax paper, and cool.
  4. Place green layer onto a piece of plastic wrap large enough to wrap all three layers. Spread green layer with raspberry jam, and top with uncolored layer. Spread with apricot jam, and top with pink layer. 
  5. Wrap with plastic wrap. Place  pan or cutting board on top to flatten. I usually add heavy cans of tomato sauce for more weight. Refrigerate overnight.
  6. Remove plastic wrap. Top with melted chocolate, and refrigerate until chocolate is firm. Slice into small squares to serve. 
  7. The recipe usually makes 75 to 90 cookies depending on the size of the slices.

Weekend Recap (a day late)

This past weekend was pretty uneventful besides picking momma up from her trip to GA on Saturday night. I was realy glad to see her but I know she wishes she was still with my aunt. Sadly her health declined this week and she was admitted back into the hospital. Turns out the rehab hospital she was in gave her an overdose of medication. Like she doesn't have enough working against her now she has to deal with this. Keep sending those good vibes I know she could really use them now!

Off to a lighter topic. I have been feeling under the weather and did a lot of napping which NEVER happens only when I'm sick. I had an extra day off this week and did lots of stuff around the house.

I tried pampering myself by doing this water marble project.


This SOOOOO did NOT work. I gave up! I followed all the directions on the blog and it still look like a clumpy mess.

I also had a huge craving for chocolate this week so I made these little pieces of HEAVEN. I can't express how delicious these were.

On Sunday we spent the day relaxing at the pool with family. I ended up sleeping under a towel with a puppy on my lap for hours. Thank goodness that picture disappeared but I did click this one late Saturday night/early Sunday morning on our return for the airport.

This sums up our weekend pretty well!

Baking a Watermelon Cake

Over the holiday weekend I wanted to make B a birthday cake. Originally I was planning on making a patriotic red, white and blue cake. Last minute I realized I didn't have any blue food coloring. Since I HATE Shoprite I refused to make the trip. With what I did have in the house I created this SWEET TREAT ! It was a huge hit. Looked cute and tasted good too.

Not good with pics. Baked two cakes, cut all in half.

Then green the sides. It needed lots of green food coloring.   
Then I iced the red and yellow mixture. 


Don't mind the little white frosting spot. I fixed that up.

Very fun last minute baking project. It was pretty time consuming but the reaction on everyone's face when they saw it was awesome!
