Grilled Summer Corn

It's summer time and in the summer there is nothing I love more than food cooked out on the grill. Almost every night in the summer Brian and I cook out on our grill and eat dinner on our back deck. My most favorite thing to eat on the grill is New Jersey sweet corn. Now that it's July Jersey sweet corn is all over! I like my corn with a little zest and a little spice. My favorite thing to pair it with grilled steak and cucumber salad.  Since corn is my favorite side dish I thought I'd share my favorite recipe with you.



Ingredients
- Corn, shucked and cleaned
- Mayonaise
- Pico De Lime 
- Lime Juice
- Parmesan Cheese


Instructions
- Preheat the grill at medium temperature
- Brush on the mayonnaise. A little goes a long way
- Sprinkle with the Pico De Lime or paprika than add roll it through some parmesan cheese. 
- Wrap in aluminum foil 
-  Place corn on the grill and grill for 15 minutes but don't forget to turn them a few times so they cook evenly. 

I just like this zesty summer corn recipe. After cooking the parmesan will bake it and leave a bit of crust. The Pico De Lime I get in the specialty store. It can be very spicy so I sometimes use paprika instead. It is just as tasty but like the mayo a little bit goes a very long way.

Veggie Chili

Last week my husband and I took a Saturday night shopping trip to Trader Joe's and Corrado's Italian Food Market. Yes, you read that right a date night/food shopping trip. They are both located about 35 minutes from our house so we rarely go but this night we made it worth it. We stocked up on tons of fruits and vegetables. I had a vegetable chili in mind for the week.

Here's what you need:
Onion
Garlic
Eggplant, thinly chopped
Squash
Mushrooms
Portobello mushrooms
Black Beans
Corn
Tomatos, diced
Boca Crumbles
Tabasco Sauce
Siracha Sauce




I used my Creuset Cast Iron. Its my favorite item from my bridal shower. I think cooking in the cast iron enhances the flavors of anything you cook.

-Add oil to the pan add a chopped onion and let it sweat down.
-Add the clove of garlic, finely sliced.
-Add in black beans and tomatoes
-Add in all the fresh vegetables
-Add the corn. I cheated it isn't fresh!
- Add the Tabasco, chili powder, black pepper and Siracha sauce.

I let this sit for a day to let the flavors marry well. We served with some light shredded cheddar cheese.
It was delicious. I believe this was 5 Weight Watcher's Points Plus Value per cup.

Life Lately



Well Happy October! October is my favorite month of the year. The leaves are already changing here and its so beautiful. I love waking up and enjoying a cup of coffee on my deck during these chilly Fall mornings. If you stopped by the blog last week I participated in a Fall Fashion week and skipped out on my usual blog posts. It was super fun taking pictures of my daily outfits and meeting some new friends.
 
Here are some of the things going on in our little corner of the world.
 
I just love Farmer's Markets. I found a new one located close to our home. Last week we bought beautiful fall mums and the freshest kale.

How can you tell its fall in my house? Silly Halloween socks are a must!
 
My wallet hates me but I realized 2 of my favorite stores have opened outlets not to far from my parents. I'm in love!
 


- Vacation is over. BOO! I didn't do much but not being at work is everything! We took a day trip to 2 little shopping towns. Hubs and I also celebrated 2 special days last week. We celebrated the anniversaries of when we got engaged 9-26-10 and when we bought our home 9-29-2009. I love celebrating important days in our lives.







- Ear infections. I have been miserable for 3 days. This is no fun. I'm so congested. Everything sounds like I'm under water these days.

- We got some new furniture. FINALLY!!! We have a hard time making decisions in t
his house. It only took 3 years to find one and take it home. Now we have to redo the kitchen and get a headboard for the master.



- The most significant thing going on in my life is my weight loss journey. Weight Watchers is going pretty well. I weigh in again tonight. Its been 2 weeks and I'm down 6 pounds. I am hoping there is another loss when I weigh in tonight. I feel great about myself. Feeling a little room in my jeans in all the right area. It feels good to look in the mirror and see things I like again.

Oscar Mayer Turkety- 6 slices, 1 point value
Strawberries- 0 point value
Feta Cheese- 1 Tbsp, 1 point value
Balsamic Dressing, light- 0 point value
Artichoke Hearts- 1 point value
Toasted Crackers- 3 crackers (instead of croutons) 1 point value

Pumpkin Hummus and Pita Chips

I love me some hummus. I actually make hummus a lot but this is by far my favorite recipe. 


  • Hummus 
  • 2 cans garbanzo beans
  • 1 (15 ounce) can pumpkin puree
  • 1/2 of lemon juice
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup tahini paste
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • salt to taste

  • Directions

    Drain the garbanzo beans, reserving the cooking liquid. Place the beans and 1/2 cup of the reserved cooking liquid into a blender, and puree until a smooth paste forms. Add the pumpkin puree, lemon juice, olive oil, tahini, garlic, cinnamon, nutmeg, and allspice. Add salt to taste. Leave overnight to the the flavors to blend together. 

For anyone needing a blender the Ninja is the greatest thing I have ever owned! 


Pita Chips
I made a savory batch and a sweet batch.

Sweet Batch
Pita bread
Olive Oil
Brown Sugar
Cinnamon 
Nutmeg

Savory Batch
Pita Bread
Olive Oil
Rosemary 
Garlic

1. Slice Pita bread into 8 slices
2. Add seasoning of your choice to a bowl of olive oil. 
3. Dip the pita bread into the mixture.
4. Bake for 8-10 minutes depending on the crunch you like.

Rainbow Cookies

My most favorite thing to do during the holidays is bake rainbow cookies. They are a hit with everyone. I still say I won Brian's family over with these cookies a few years ago!




  • 8 ounces almond paste
  • 1 cup butter, soft
  • 1 cup sugar
  • 4 eggs, separated
  • 2 cups all-purpose flour
  • Red food coloring
  • Green food coloring
  • Red raspberry jam
  • Apricot jam
  • 1 cup semisweet chocolate chips, melted


  1. Preheat oven to 350 degrees F Line three 9x13 inch baking pans with wax paper. Its easier if you have 3 of the same pans. It takes less time. 
  2. In a large bowl, break apart almond paste with a fork, mix together with butter, sugar, and egg yolks. When mixture is smooth, mix in and it will form a dough. In a small bowl, beat egg whites until soft peaks form. Mix egg whites into the dough. Split dough into 3 equal portions. Usually I get a little more then one cup in each. Add red food coloring to one, and one with green food coloring, leaving the last without any color. Spread each portion into one of the prepared baking pans.
  3. Bake 10 to 12 minutes in the preheated oven, until lightly browned. Remove wax paper, and cool.
  4. Place green layer onto a piece of plastic wrap large enough to wrap all three layers. Spread green layer with raspberry jam, and top with uncolored layer. Spread with apricot jam, and top with pink layer. 
  5. Wrap with plastic wrap. Place  pan or cutting board on top to flatten. I usually add heavy cans of tomato sauce for more weight. Refrigerate overnight.
  6. Remove plastic wrap. Top with melted chocolate, and refrigerate until chocolate is firm. Slice into small squares to serve. 
  7. The recipe usually makes 75 to 90 cookies depending on the size of the slices.

Abelskivers For Desert

When the 4 walls start caving in what do you do EAT! (I'm gonna get so fat this week. Our gym has also lost power and may not be opened for days.) Last night we tried Ebelskivers! Ebelskiver is a Dutch desert and its incredible! My friend got the pan and the cookbook for her bridal shower. This exciting little desert was AWESOME! We made a simple recipe and filled them with lovely goodies like homemade raspberry jam, Nutella and peanut butter.
 Here is the recipe:

  • 2 egg whites
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 egg yolks
  • 4 tablespoons butter, melted
  • 2 cups buttermilk
  • 1 cup vegetable oil for frying
  1. In a bowl, beat the egg whites with an electric mixer until they can hold a stiff peak. Set aside.
  2. Mix together the flour, baking powder, salt, baking soda, sugar, egg yolks, melted butter and buttermilk at one time and beat until smooth. Gently fold in the egg whites last.
  3. Put about 1tablespoon of vegetable oil in the bottom of each pan cup and heat until hot. Pour in about 2 tablespoons of the batter into each cup. We filled ours with goodies. As soon as they get bubbly around the edge and then turn them. We didn't have the flipper so we used chop sticks. Continue cooking,turning the ball to keep it from burning.

Hope everyone is doing well! We still don't have power at our house. Today should have started our vacation. We would have been down the shore, visited the Delaware Water Dap but sadly that will not be happening this year.

PARTY

Since not all of my are Bridesmaids are well aquatinted with one another my mom and I decided to host a party for all them all to meet in person. I know they have emailed or met years ago so this a way of getting to know everyone or putting a face to the email address. I'm having them all over this Sunday.

I want to make it a fun day with some delicious eats. Here are a few of my ideas.

Drinks:



Lemonade with some fruit (I've started making watermelon, strawberry and peach ice cubes)



Iced tea



White wine sangria or spritzer
Starters: 

Fresh made hummus and pita





Lunch

Strawberry, Spinach and Gorgonzola Salad-Because its my favorite!




Fresh Corn Salad

Chicken Salad on mini Crescents


Quiche

Some sandwich wraps including roast beef and gouda cheese and turkey with mozzarella, roasted red peppers and balsamic vinegarette.

Desert

Pina Colada dip served with fresh fruits and angel food cake for dipping.


Trifle???

Cake pops




Dessert Popsicles
